Toads in the Hole

I’m having a good laugh because this is not food porn; not even close. In fact, it may be the ugliest photo of food I have ever seen. At any rate, it was a new recipe for me and I am very happy with how it came out.

I’m still laughing because I basically took a traditional British Sunday dinner comfort food and desecrated it. I don’t know any Brits personally, but I have a feeling that no self respecting Brit would eat the Sarah Geraci version. Who wants to eat traditional British food cooked by a mutt with an Italian last name?

At birth, this recipe was created with sausage. If you think my photo with eggplant looks creepy you should first compare it to photos of the sausage versions. I have never tried this recipe with sausages. I went straight to eggplant. I cut it in long quarters. I tossed it in coconut oil, salt and curry powder. Then I put it in the oven on 200°C and roasted it, in a casserole dish, until it browned. Once out of the oven, I rubbed a bit more coconut oil on the casserole dish so the batter wouldn’t stick. I poured the prepared batter over the eggplant and stuck it back in the oven. The above picture represents what came out.

In keeping with tradition, to some bit, I did boil potatoes and have them as my side dish. I regret to inform the Brits, however, that I did not make gravy. In lieu of gravy, I heated some coconut milk and more curry, and I poured the mixture on top of my potatoes and Toads in Holes.

I loved it. I think you could too. Just think to yourself, “What do I love to eat?”. What ever the answer to that question is, gets batter poured on top of it, baked, and eaten. You may not even need a sauce.

You know what I’m going to try next?

Olives and Artichokes. And I’m going to top them with stewed tomatoes.

I will not photograph it. It will, most likely, be hideous.
